If you don’t normally grill your vegetables, I highly suggest you give it a try! Grilling them caramelizes the natural sugars in them and imparts a delicious depth of flavor. The caramelization happens just like when they’re roasted in the oven, except you don’t have to heat up your kitchen! I used the grilled veggies and pineapple slices to build this delicious vegan sandwich; the flavors and textures were out of this world! Read on to see how I made my Vegan Grilled Veggies using a Weber portable grill that I won!
To make vegan grilled veggies, just heat up your grill to about medium heat. Be sure to wait until it’s hot before adding the veggies. Carefully place them on the grill and don’t move or turn them until they lift easily. They’ll take about 5-7 minutes depending on how thick you slice them. When they easily lift they’re ready to flip over. Keep an eye on them until the other side has grill marks and they lift easily. I didn’t flip the mushrooms, I just left them in place until all the veggies were done then poured off the marinade before building the sandwich. You don’t have to add any oil to the veggies or the grates. If the grill is hot enough and you don’t move them too soon they won’t stick.
A lot of veggies do well on the grill. I used summer squash, eggplant, onion, portobello mushrooms and also threw on some pineapple slices as well. Be sure to cut everything large enough so they don’t fall through the grates. And, more surface area touching the grill means more awesome grilled flavor. I marinated the mushrooms in chopped red onion, garlic and balsamic vinegar for about an hour before grilling. I built my vegan grilled veggie sandwich using my favorite Trader Joe’s ciabatta roll and layered the eggplant, summer squash, tomato slices, pineapple, the meaty sliced portobello mushroom and arugula. Don’t forget my easy special sauce just made up of some vegan mayo, ketchup, garlic powder and cayenne to taste. Yum!
If you’re not crazy about veggies but are trying to get more in your diet try grilling them, it mellows the flavor and ditches any bitterness!
