Hectic days, call for easy, tasty meals! Today was one of those ‘Murphy’s Law’ kind of days, everything that could go wrong seemingly did. Endless traffic and lines that make me late are the bane of my existence since I’m always on a tight schedule, driving from one Real Estate photo shoot to the next. Of course, lucky me…I got behind THE slowest vehicle on the planet at one point with no way to get around him. He needs to take his ‘Sunday drives’ on a Sunday, already! OK, end rant. 🙂 So, it’s the middle of October, but, we’re still experiencing summer temps here in the afternoon, so, I won’t be making my favorite fall soups just yet, but, these quick and easy spicy chicken lettuce wraps are stress free to make on days like this and they’re loaded with flavor (no exaggeration!) Perfect to whip up after a day like today. If yours was like mine, you need to make them too! And here’s a bonus, they’re low carb and gluten free, so, load up those lettuce leaves!!

After eating off-plan while in Dallas recently for the last concert of George Strait’s The Cowboy Rides Away Tour, it’s definitely time for paleo/cleaning eating again! It was a lovely mother/daughter bonding weekend, but filled with a little too much eating! For the first time ever, we had an InNOut burger. I love the way they offer their burgers wrapped in lettuce leaves as an option, and how about that mustard-fried technique of cooking burgers??!!

It’s so great to have my fingers back in the blog, posting a recipe again! It’s been a while and I’ve missed being here!! I have a Real Estate photography business that is hopping this time of year, but, thankfully, I’ve got some help now, so, I’m excited to be able to carve out time to post more regularly!

So, you’d think a hot, steamy burrito bowl (on a plate) would sound crazy to have in south Texas when it’s 96 degrees, but, really…it’s never too hot to have a savory bowl of this deliciousness!
