Hectic days, call for easy, tasty meals! Today was one of those ‘Murphy’s Law’ kind of days, everything that could go wrong seemingly did. Endless traffic and lines that make me late are the bane of my existence since I’m always on a tight schedule, driving from one Real Estate photo shoot to the next. Of course, lucky me…I got behind THE slowest vehicle on the planet at one point with no way to get around him. He needs to take his ‘Sunday drives’ on a Sunday, already! OK, end rant. 🙂 So, it’s the middle of October, but, we’re still experiencing summer temps here in the afternoon, so, I won’t be making my favorite fall soups just yet, but, these quick and easy spicy chicken lettuce wraps are stress free to make on days like this and they’re loaded with flavor (no exaggeration!) Perfect to whip up after a day like today. If yours was like mine, you need to make them too! And here’s a bonus, they’re low carb and gluten free, so, load up those lettuce leaves!!

After recently finishing a successful Whole30 and taking a couple of weeks off, I’m happy to have started up again today with this scrumptious chicken sausage, zucchini noodle egg skillet breakfast! It’s Low Carb, Gluten Free, Paleo and Whole30 compliant. But, besides it being all that and a bag of plantain chips, it’s just super tasty and filling! It’s become one of my favorite go-to breakfast meals, but, it’s good at any time of the day!

Sweet Potato Chips (Paleo, Whole30) are just perfect for getting my crunchy/salty fix! Here’s a quick and easy recipe your entire family will love! I don’t use the microwave often, but, now and then it certainly is a timesaver and I welcome that. These sweet potato chips are fast to put together for a last-minute party snack or when you don’t want to heat up your kitchen in those sweltering days of summer; or you just don’t feel like waiting for the oven to heat up! You know, instant gratification! Super healthy and flavorful! A must try!!
