How cute is this Bacon Weave Egg Salad Tartine? If you’re not familiar with tartines, they’re a fancy French open-faced sandwich topped with spreadable ingredients. Ok, bacon isn’t a fancy ingredient, but it’s bacon, hello! (The bacon weave replaces the bread in an open-faced ‘sandwich’). I know, we’re nearing the end of January, but, Happy New Year! I’m sincerely hoping you all had a wonderful Christmas/holiday season and are having a fabulous start to the new year! After recently finishing a successful Whole30 and taking a couple of weeks off, I’m happy to have started up again today with this scrumptious chicken sausage, zucchini noodle egg skillet breakfast! It’s Low Carb, Gluten Free, Paleo and Whole30 compliant. But, besides it being all that and a bag of plantain chips, it’s just super tasty and filling! It’s become one of my favorite go-to breakfast meals, but, it’s good at any time of the day!
