Simple, fresh ingredients make for a delicious, fun meal! Crispy corn tortillas, creamy avocado mashed with a little lemon juice and sea salt, ripe tomato slices, an egg cooked your favorite way and a few drops of Sriracha = yummy Mashed Avocado Stack with Tomato and Egg for any time of day!
Spray a large skillet and the tortillas lightly with a little non-stick spray. Weigh down the tortillas with cans; heat for a minute over medium high heat (or press with a spatula), then flip and cook another minute, or to desired crispness.
Spread half of the avocado mixture on each of the crisped tortillas, add 2 slices of ripe tomato sprinkled with salt and pepper to each, and top the stack with a fried egg. Finish with a few drops of Sriracha. The perfect blend of crispy, creamy, warm, cool, hot and spicy!
