It’s day 20 on my Whole30 plan and I’m wanting some big-flavor Mexican food. A savory Carnitas recipe  with a cold crisp salad, topped with salsa and a side of quacamole fills the bill!

The pork simmers slowly in a hot bath of lemon and lime juices and a variety of warm spices until it’s fall-apart-tender! Delicious and very satisfying! Serve it low carb or paleo style, or with a soft tortilla. What is your favorite way to fill a tortilla? Share in the comments!

  • 2-3 pounds pork shoulder or butt, boneless or bone-in
  • ⅓ c lime juice
  • ⅓ c lemon juice
  • 1 tablespoon cumin
  • 2 teaspoons garlic powder
  • 2 teaspoons salt
  • ½ teaspoon ground coriander
  • ½ teaspoon cayenne pepper
  • ½ teaspoon ground black pepper
  1. Combine all the spices and salt in a small bowl.
  2. Cut pork into large chunks (about 3-4 inches) and add to large deep skillet.
  3. Add in the spices and salt mixture and rub into the pork.
  4. Pour in the lemon and lime juice.
  5. Add in enough water to cover the pork.
  6. Bring the water to a rolling boil, then reduce the heat to a vigorous simmer.
  7. Simmer for 2 hours, checking occasionally, until the liquid is cooked away.
  8. Brown the meat on all sides. Remove from heat and serve.
  9. Serving suggestions:
  10. Serve in tortillas with lettuce, tomato, onion, sour cream, guacamole and shredded cheese of choice.
  11. As Carnitas con Huevo: shred carnitas and spread on a plate. Top with a fried egg with guacamole on the side. Garnish with cilantro.

    I recently found a wonderful flour type paleo tortilla recipe and now I am going to add your carnitas for an awesome Mexican meal! Can’t wait! I am actually going to purchase an electric tortilla maker. I’m so excited!!! I can’t wait!!! Thank you for sharing this recipe!!!

      Hey Brenda, let me know how the paleo tortilla recipe worked out with the carnitas! I have a cast iron tortilla press that works great for flattening the dough evenly, and then I ‘cook’ them in a hot skillet, but, the electric tortilla maker would be great to flatten and cook them all at once!
